I don't know if this is totally original, but for David to just out of the blue "invent" something is SO not like him :o) Well, anyway.. here is David's authentic recipe for...

Fried Mashed Potato Balls! (serves 2-3 people) GREAT APPETIZER!!
Ingredients
1] 4 medium potatoes
2] 1 cup of various cheeses (we used muenster, sharp and mozzarella)
3] 2 eggs
4] 1 tsp salt
5] 2 cups bread crumbs (we used italian bread crumbs)
6] 2 tbsp low-fat butter

  • Cut up potatoes into small pieces and boil until the potatoes are tender to mash. (depending on the size of cut up potatoes, it could take longer to become tender)
  • Drain potatoes and whip in 2 tablespoons of butter.
  • Add cheese and and salt to potato mixture and stir well.
  • The potatoes should be stiff.
  • Use a tablespoon sized bit of potato mixture and roll gently into a ball.
  • Roll in bread crumbs.
  • Beat eggs, roll potato balls into egg mixture and then roll into bread crumbs a second time.
  • Fry the potato balls until golden brown. (I like mine extra crispy!)
AND presto! Fried Mashed Potato Balls!

I think I am the only person in this town who loves snow. I would live in Alaska or the mountains if it meant I could see snow every day. Just provide an indoor water park and I'll be set for life. I love cold weather. I think I have adapted to enjoying cold weather because it means (in some instances) no school, NO ALLERGIES and no blistering heat. Three things I hate just knocked out all together! It's amazing.



It wasn't my decision to wake up as early as I did today. I meant to sleep in til noon. The cat would NOT stop cleaning him self on the bed. Then, he started attacking my feet. It was horrible so I finally just gave up and go out of bed. Now HE is sleeping. What a punk.

Last night David and I made stuffed ricotta shells with alfredo sauce on half and spaghetti sauce on the other half. It was amazingly good! I have forgotten how good simple meals are! :o)

Today is 2 months since David and I went major grocery shopping. It makes me feel good to know that him and I can just wait it and use all of our resources. Today I was thinking of making home made pretzels.

That is one thing I LOVE about having my own kitchen. I have made SO MUCH home made stuff lately. I love it! I LOVE to cook! I think I have found something that I find really calming. It just really takes my mind away from life when I am busy measuring things. The other night David and I made sweet corn tomalitos. It's the like... corn pudding blob you get on the side of your dish at a mexican restaurant. It was SO good!

Well, I am just rambling now. My birthday is a week from Wednesday! How EXCITING! I can finally buy a single can of beer to cook with! WOOHOO!!

I need a new phone... and badly.

I don't have any money for one so I've been searching craigslist.... no luck. I think I'm just going to go without a working phone for a while... I can at least receive calls (sometimes) and text (sometimes..) and I suppose that's good enough for now.

[my dementor is gone]

I am having a wonderful time now. I have passed all of my exams with flying colors and it's already week 5 of school. We are just about 1/3 of the way done already! I can't believe it!

March 11th, for those of you who have forgotten, is my 21st birthday! I am so excited! I don't think anyone is doing anything for me except for my Mommy :). She is my best friend!! I think she is taking David and I out for crab legs to celebrate (PS DAD YOU BETTER GO OUT TO EAT WITH US!!! I don't care how sick of eating at restaurants you are!!! hehehe) I know David will do something nice for me, but other than that it will still be okay!!! I wish my sister could be here though. Then we could all be together!!

I am currently unemployed and broke. I don't know how long I'll have before all of my savings accounts and my checking accounts hit zero. I guess being broke had to happen some time in my life. So, for all of you reading -- feel free to send me some rent money/electricity bill money!! :-)

Now that I have no money, my cell phone decided to break. So now, I am using a crappy phone to try and get by until I can afford a new one. UGH.

PS -- Aunt Annette, thank you for the really thick blanket you gave my mother. She gave it to me and I needed it badly. We don't have enough money to turn our heater on so we've been without heat this entire winter! We just rely on our fireplace! SO THANK YOU! It is GREAT!!!!!!
