I don't know if this is totally original, but for David to just out of the blue "invent" something is SO not like him :o) Well, anyway.. here is David's authentic recipe for...

Fried Mashed Potato Balls! (serves 2-3 people) GREAT APPETIZER!!
Ingredients
1] 4 medium potatoes
2] 1 cup of various cheeses (we used muenster, sharp and mozzarella)
3] 2 eggs
4] 1 tsp salt
5] 2 cups bread crumbs (we used italian bread crumbs)
6] 2 tbsp low-fat butter

  • Cut up potatoes into small pieces and boil until the potatoes are tender to mash. (depending on the size of cut up potatoes, it could take longer to become tender)
  • Drain potatoes and whip in 2 tablespoons of butter.
  • Add cheese and and salt to potato mixture and stir well.
  • The potatoes should be stiff.
  • Use a tablespoon sized bit of potato mixture and roll gently into a ball.
  • Roll in bread crumbs.
  • Beat eggs, roll potato balls into egg mixture and then roll into bread crumbs a second time.
  • Fry the potato balls until golden brown. (I like mine extra crispy!)
AND presto! Fried Mashed Potato Balls!
